Tajadas make everything better!

I come from a South American country filled with the most unimaginable variety of food. A beautiful place framed by two very blue oceans and protected by a tropical sky, where a smile is only the beginning to the everlasting celebration of life. A place named, Colombia. 


In Colombia we dance. We dance when we welcome, when we say good bye, and waking up in the morning is a good reason to dance. I dance while I cook (my girlfriend really likes that) because I am convinced, that is the secret to the Latino flavor everything I cook has, and the reason why my son says, "Mommy, you are the best!" I am a food lover. It would take me a few hours, to name just few of my favorite, although the more I think about it, the more I just realize, I like all kinds. But if I had to choose something that I would serve on every single one of my meals, it would be tajadas, Oh sweet and delicious tajadas.


Tajadas, also called fried sweet bananas, are the result of slicing a ripe plantain (looks like a banana but is bigger and betterand frying the slices until they turn into a goldish color. No more, no less. But when they are in my plate, the food tastes even better.


I have always considered food a form of communication. For example, we cook something special when we want to say "I love you". We go out to dinner when we celebrate an achievement, or a birthday, or many other special moments when we want to show someone our feelings beyond words. If we are mad, sad or frustrated, everyone gets to taste a piece of our mind over dinner. If you are anything like my mother, your coffee may have a salty flavor added to it, but if you are like me, the ingredients will be right, but the food will be simply burned.


No matter what my reasons are, food has ALWAYS allowed me to show my feelings, good or bad, it doesn't matter because... Tajadas Make Everything Better!
